Among the dishes are miso cured salmon with katsuobushi, sea vegetable and pickled plums; as well as oak smoked pork belly with beetroots, muntries and fermented plum jus. Finish with a dark chocolate marquise, whipped pistachio, eucalypt caramel and blackberries.
